PRUNE - MOLASSES MUFFINS 

 

2 ½ cups all-purpose flour

1 cup quick-cooking oats

¾ cup sugar

¼ cup toasted wheat germ

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon baking soda

½ teaspoon salt

1 cup finely chopped pitted prunes

1 cup low-fat buttermilk

½ cup light ricotta cheese

3 tablespoons vegetable oil

2 tablespoons molasses

1 tablespoon vanilla extract

2 large eggs

Vegetable cooking spray

 

STEPS

 

1.  Preheat oven to 400 degrees.

2.  Combine first 8 ingredients in a bowl.

3.  Stir in prunes; make a well in center of mixture.

4.  Combine buttermilk and next 5 ingredients; stir well with a whisk.

5.  Add to flour mixture, stirring just until moist.

6.  Spoon into 18 muffin cups coated with cooking spray.

7.  Bake at 400 degrees for 18 minutes or until done.

8.  Remove from pans immediately and cool on a wire rack.

9.  Serving: 18 muffins
