STRAWBERRY SYRUP

 

1.  Mash together.  Force through strainer (approximately 2 ½ cups juice):

1 quart strawberries

¾ cup sugar

 

2.  Combine in a saucepan.  Bring to boil, stirring constantly.  Boil 4 minutes.  Remove from heat.  Skim off foam:

Strained strawberry juice

½ cup sugar

3 tablespoons lemon juice

¼ teaspoon salt

 

3.  Stir into juice mixture:

2 tablespoons butter

½ teaspoon vanilla

 

4. Make approximately 2 ½ cups. 

 

The perfect topping. Also great to pour over French toast, pancakes or waffles.
