HAWAIIAN LOAF

 

1 cup butter

2 cups sugar

4 eggs

1 cup mashed ripe banana

4 cups flour

2 teaspoons baking powder

1 teaspoon baking soda

¾ teaspoon salt

1 20 oz. can undrained crushed pineapple

1 cup flaked coconut

 

STEPS

 

1.  Preheat oven to 350 degrees.

2.  In medium bowl, beat butter with electric mixer until light and fluffy.

3.  Beat in sugar until light and add eggs, beating well.

4.  Stir in mashed bananas.

5.  In medium bowl, combine dry ingredients and add to butter mixture, mixing just until smooth.

6.  Fold in pineapple and coconut and spoon batter into 2 greased and floured 9 x 5 inch loaf pans.

7.  Bake until tooth pick inserted comes out clean, about 60-70 minutes.

8.  Each loaf yields 10 slices (1/2 inch thick).

9.  For lower calorie version use:  egg substitute, ½ cup coconut, ½ cup butter and ½ cup applesauce.
