WILLIAMSBURG SWEET POTATO MUFFINS

½ cup butter

1 ¼ cups sugar

2 eggs

1 ¼ cup mashed sweet potatoes

1 ½ cups all-purpose flour

2 teaspoons baking powder

Extra sugar

¼ teaspoon salt

1 teaspoon cinnamon

¼ teaspoon nutmeg

1 cup milk

¼ cup chopped pecans

½ cup raisins

 

STEPS

 

1.  Preheat oven to 400 degrees.

2.  Cream butter and sugar.

3.  Add eggs, mixing well.

4.  Blend in potatoes.

5.  Sift dry ingredients and spices, and alternately with milk.

6.  DO NOT OVER MIX.

7.  Fold in pecans and raisins.

8.  Fill greased muffin tins ⅔ full.

9.  Sprinkle with extra sugar.

10.  Bake for 25 minutes.

11.  Turn out of tins to cool.
