BANANA-SPICE MUFFINS
2 ˝ cups all-purpose flour ⅓ cup granulated sugar ⅓ cup packed brown sugar 1 tablespoon baking powder 1 teaspoon baking soda ˝ teaspoon salt 1 teaspoon ground allspice 1 teaspoon ground ginger 1 cup mashed ripe banana (about 2 small) ⅔ cup 2 % low-fat milk ⅓ cup low-fat buttermilk ⅓ cup light ricotta cheese 2 tablespoons vegetable oil 1 tablespoon vanilla extract 1 large egg white 1 large egg Vegetable cooking spray
STEPS
1. Preheat oven to 400 degrees. 2. Combine first 8 ingredients in a large bowl; make a well in center of mixture. 3. Combine banana and next 7 ingredients. 4. Add to flour mixture, stirring just until moist. 5. Spoon batter into 18 muffin cups, coated with cooking spray. 6. Bake at 400 degrees for 18 minutes or until done. 7. Remove from pans immediately and cool on a wire rack. 8. Serving: 18 muffins
