CRANBERRY AND PEAR CRUMBLE
TOPPING
1 ½ cups unbleached all-purpose flour ¼ cup sugar ½ teaspoon cinnamon ¼ teaspoon nutmeg ¼ teaspoon salt ½ cup unsalted butter cut into small cubes
STEPS
1. Grease a 12 inch oval or 9x13 rectangular baking dish with butter 2. Preheat oven to 350 degrees 3. For topping: mix together flour, sugar, nutmeg, cinnamon and salt 4. Using 2 knives or pastry blender, cut the butter into the flour mixture until crumbly 5. Refrigerate this topping mixture while you prepare the fruit.
FILLING
½ cup sugar Pinch of salt 2 tablespoon cornstarch 6 pears (Anjou) peeled, cored and diced (approximately 5 ½ - 6 ½ cups) 1 cup fresh cranberries coarsely chopped
STEPS
1. In a bowl, stir together sugar, salt and cornstarch 2. In another large bowl, combine diced pears and cranberries. 3. Sprinkle with the sugar mixture until evenly coated. 4. Spoon the fruit mixture into the prepared baking dish. 5. Sprinkle topping mixture over fruit. 6. Bake approximately 40-50 minutes until topping is crisp. 7. Serve with vanilla ice cream. |
