SWEET POTATO CREAM CHEESE POUND CAKE
3 sticks margarine 3 cups sugar 6 large eggs 1 teaspoon baking powder 1 medium sweet potato cooked, peeled and mashed well 1 8oz. package cream cheese 3 cups cake flour (sifted) 2 tablespoons vanilla butter nut flavoring
STEPS
1. Have all ingredients at room temperature. 2. Cream margarine, cream cheese and sugar. 3. Sift flour and baking powder. 4. Add eggs and flour mixture, alternately ending with flour. 5. Beat well. 6. Pour into a well-greased and floured tube or Bundt pan. 7. Bake at 325 degrees for 1 hour and 20 minutes. 8. Before removing pan from oven, insert toothpick making sure pick comes out clean.
