CARROT CAKE

 

1.  Mix and sift together:

2 cups flour

2 cups sugar

2 teaspoons soda

2 teaspoons cinnamon

 

2.  Add to dry ingredients:

1 1/4 cups Safflower oil

3 cups grated carrots

 

3.  Add one at a time and beat after each addition:

4 eggs

 

4.  Bake at 350 degrees until cake pulls away from sides of pan.  Grease bottom of cake pan.

 

5.  Cool all layers before icing.

 

6.  Makes approximately 4 layers.

 

FILLING

 

1 8 oz. package cream cheese

½ cup butter

1 box powdered sugar

1 cup chopped nuts

2 teaspoons vanilla

 

*1 cup coconut may be used if desired.

 

1.  Add all ingredients to bowl.

 

2.  Beat with electric mixer until well blended.

 

3.  Spread on cake.
