SWEET POTATO-PINEAPPLE CAKE
1 ˝ cups all-purpose flour 1 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon ˝ teaspoon salt 1 teaspoon vanilla ⅔ cup cooking oil 2 eggs 1 cup shredded sweet potatoes ⅔ cup crushed pineapple with syrup
STEPS
1. Mix all ingredients together until moistened. 2. Beat 2 minutes at medium speed with electric mixer. 3. Bake in greased 8x8x2-inch pan at 350 degrees for 40 minutes or until done. 4. Cool.
FROSTING
1 tablespoon butter, softened 2 cups sifted confectioners’ sugar 3-oz. cream cheese, softened Milk if needed 1 teaspoon vanilla + ˝ teaspoon of almond extract
STEPS
1. Beat cream cheese, butter, vanilla and almond extract on low speed with mixer until light. 2. Gradually add confectioners’ sugar, beat until fluffy, if needed add milk until it can be spread.
