ORANGE NUT MUFFINS

 

2 cups flour

⅓ cup sugar

3 teaspoons baking powder

1 teaspoon salt

½ cup hazelnuts, chopped

1 egg

½ cup orange juice (fresh or frozen)

1 tablespoon grated orange peel

½ cup orange marmalade

¼ cup milk

¼ cup cooking oil

 

STEPS

 

1.  In a large mixing bowl combine flour, sugar, baking powder, salt and hazelnuts.

2.  Combine egg, orange juice, orange peel, marmalade, milk and oil.

3.  Add this to dry ingredients and mix only until just moistened.  Do not over mix.

4.  Fill paper lined muffin tin cups ⅔ full and set aside.

 

TOPPING

 

¼ cup sugar

1 tablespoon flour

1 tablespoon butter, softened

½ teaspoon cinnamon

¼ teaspoon mace

 

STEPS

 

1.  In a small mixing bowl, combine all ingredients and sprinkle over muffin batter.

2.  Bake at 400 degrees for 20-25 minutes, or until muffins are golden brown and test done.

3.  Makes approximately one dozen.
