OATMEAL MUFFINS

 

 

1.  Pour water over oatmeal:

1 cup oatmeal

1 cup hot water

 

2.  Cream together.  Set aside:

1 cup brown sugar

1 cup granulated sugar

¾ cup Wesson oil or Safflower oil

2 eggs

 

3.  Sift together, then add creamed mixture:

1 ⅓ cups plain flour

½ teaspoon salt

1 teaspoon soda

1 teaspoon cinnamon

 

4.  Add oatmeal and water last.

 

5.  Mix well.

 

6.  Put batter in cupcake cups.

 

7.  Bake at 350 degrees for about 25 minutes.
