SWEET POTATO DATE NUT CAKE
2 cups self-rising flour 2 cups sugar 3 eggs, unbeaten 1 cup salad oil 1 cup chopped pecans ˝ cup chopped dates 1 ˝ teaspoons cinnamon ˝ teaspoon nutmeg 1 teaspoon vanilla 1 ˝ cups mashed sweet potatoes
STEPS 1. Beat eggs and sugar together. 2. Mix all remaining ingredients into egg and sugar mixture. Mix well. 3. Pour into a 10-inch well-greased tube pan. 4. Bake at 325 degrees for one hour. 5. After cake is removed from pan, place paper doily on top and sprinkle with confectioners’ sugar, then remove doily. |
